Kirinyaga Coffee Heritage
In the region known as Kirinyaga, which means “white peaks” in the local language, coffee is more than just a tradition; it is a heritage that is guarded with great care and diligence. The place is renowned for its views of snowy peaks, and the presence of the KII Factory in Kibugu, Central Kenya, adds to the richness of that coffee tradition.
KII Factory and Quality Production
KII Factory, one of three factories owned by the Rungeto Farmers Cooperative Society (FCS), was built in 1995 and serves over 850 farmer members. The careful production process begins with the use of clean water from the Kii River, which flows near the factory. This water plays a crucial role in the washed process, creating coffee with exceptional clarity of flavor.
Sorting and Drying Process
Every step in coffee production is subject to the utmost attention. Strict visual sorting by Cherry Clerk ensures that only the best coffee beans are selected. Next, fermentation takes place for 16-24 hours, followed by washing with river water. The drying process in raised beds lasts for about 14 days, during which workers carefully turn the coffee beans periodically to protect them from excessive heat during the day and humidity at night. With uncompromising dedication, we ensure that the coffee is evenly dried, resulting in a unique taste and high quality.
